Wow, it's been awhile since posting. To be honest I've been struggling with some issues and blogging took the back burner.
While temping this week, I promised to post what's in the lunchbox. Initially it was to be pureed veggie soup and chickpea salad (like tuna salad) stuffed pitas, but I hated the salad.
So last night I stayed up making some Seitan Philly Steak filling for the pitas. I had it for lunch today and it was pretty yummy. I can still taste the 'wheaty' in the seitan, though. Does anyone have a recipe where you can't taste it? Vegan Dad's Pepperoni & Brats cover up the taste pretty well, but I'm hoping for a good roast beef and chicken recipe.
It seems that we are unexpectedly moving soon, but within the same city. As soon as it is final, I'm going to start a cooking 'to do' list. Exciting for me, and geeky. :)

Working Lunches and Doctor Shmoctors!
Sorta good news--I have a temp job lasting a week, starting on Monday. It pays poorly, but it's moohlah. :) So over the weekend I'll need to figure out some lunches to pack and will probably read a good bit of Vegan Lunch Box's blog.
I also hope to find a thermos at a thrift store--was inspired by Tara. If you have any favorite lunches or know of any blogs that would help give me ideas, don't hesitate to let me know!
After figuring it out, I'll post what's on the menu for the week. :)

How much do doctors know, anyways? Was at the doctor this week and requested to have a complete blood workup. Specifically want to know what my cholesterol and triglycerides counts are. While talking to the doctor and answering the various background questions (ie any med allergies), I mentioned that I'm Vegan. The doctor looked at me blankly, "What's that mean?" Seriously?? I hated to believe he didn't know, so I was going to just jog his memory.
I explained my diet doesn't include dairy, eggs, meat or any animal byproducts. He says, "Whatever for? Just because your cholesterol is high, you can still have a bit of chicken and milk now and then." ?? To clarify, I explained it is my choice not to eat these things. He was incredulous and told me it wasn't a very healthy diet. We argued (politely) for a bit until eventually he realized I wasn't going to suddenly change my mind.
He just shook his head and said I'd likely be sick a lot. GRAAAAAAAAAAHHHH!!! I didn't have time to continue arguing, so I grabbed the bloodwork order and left. I won't be going back to this doctor, obviously.
